Pork Tenderloin with Apples and Onions

Dinner will be awesome again with this quick and easy recipe! Give it a try and I am 100 per cent certain that you and your loved ones will love it. Enjoy!

Ingredients:

2 (1 1/2 pound) pork tenderloins

2 teaspoons vegetable oil, divided

1 teaspoon of sea salt

2 tablespoons vegetable oil, divided, or more as needed

3 Granny Smith apples – peeled, cored, and sliced into eighths

2 medium sweet onions, sliced vertically

1 tablespoon Dijon mustard

1 tablespoon fresh thyme leaves, divided

¼ teaspoon ground black pepper, or to taste

1 cup chicken stock

1 tablespoon butter

Directions:

Step 1: Prepare the oven and preheat to 220 degrees C or 425 degrees F.

Step 2: Remove the silver skin from the tenderloins. Use paper towels to pat them dry. On the surface, rub a tsp vegetable oil and salt.

Step 3: In a large oven-proof skillet, heat a tbsp vegetable oil over medium heat for about a minute or until it shimmers. Add the tenderloin and cook for about 10 minutes, flip to cook the other side. Once done, transfer the cooked tenderloins on a large plate.

Step 4: Add the rest of the oil into the skillet. Once hot, add the apples and onions and cook for about 5 minutes, often stirring, until the onion is translucent. Feel free to add more oil if needed.

Step 5: In the meantime, use a pastry brush to evenly spread the Dijon mustard over the tenderloins. And season with 2 tbsp thyme leaves.

Step 6: Over the apple mixture, sprinkle the rest of the thyme followed by the black pepper. Gently stir to mix. Allow the tenderloins to settle into the skillet with the apple mixture.

Step 7: Roast in the preheated oven, uncovered, for about 15 minutes or until an instant-read thermometer inserted in the centre of the tenderloins registered at least 145 degrees F or 63 degrees C.

Step 8: Once done, transfer the roasted pork on a plate. Use aluminium foil to cover the dish and allow to rest.

Step 9: Bring to a boil a saucepan with chicken stock over medium-high heat. Cook for about 8 to 10 minutes until the liquid has decreased to about half. Pour this over the skillet with the apple mixture.

Step 10: Bring the apple mixture to a boil for about 5 minutes, then, stir in the butter until completely melted.

Step 11: Before serving, slice the pork and serve over the apple mixture.

Notes:

I recommend using Golden Delicious Apples or any firm variety of apples preferred if you want the apples to retain their shape.

Microwave the chicken stock to reduce its volume.

Quick Chocolate Chip Cookie Cake

I remember my Grandma used to make this amazing cake for us whenever we visited her and Grandpa. Luckily, she taught me how to bake it. Now, I get to share it with you! This set of ingredients are pretty basic so feel free to add more if you prefer. Give it your take and make it your recipe! Oh, man, you are so in for a treat! This cake is perfect to go with hot coffee or iced tea. I hope you all love and appreciate this recipe because it has a very special place in my heart. May you all have a blessed day, friends. Ingredients:

1 (15.25 ounce) package yellow cake mix

2 cups mini chocolate chips

2 eggs, beaten

5 tablespoons butter, melted

Directions:

Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: Apply cooking spray in a 9×13-inch baking dish.

Step 3: In a medium mixing bowl, add the eggs, cake mix, chocolate chips, and butter. Stir until well mixed.

Step 4: Transfer the mixture into the prepared baking dish.

Step 5: Place the pan inside the preheated oven and bake for 20 minutes or until a toothpick comes out clean after inserting it in the middle of the cake.

Step 6: Remove the cake from the oven and let it sit on a wire rack to cool at room temperature.

Step 7: Serve and enjoy!

Note:

You can use a white mix instead of a yellow mix.

This cake will surely make your day! Feel free to tweak the recipe a little if you prefer. I have listed all the steps so make sure to follow them step-by-step. Enjoy!

Ingredients:

1 teaspoon shortening, or as needed

1 teaspoon all-purpose flour

Cake:

½ cup butter softened

1 ½ cups white sugar

3 eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

2 teaspoons baking soda

1 teaspoon baking powder

½ teaspoon salt

½ teaspoon ground cinnamon

¾ cup milk (Optional)

Icing:

½ cup butter, at room temperature

1 teaspoon vanilla extract

1 teaspoon honey (optional)

2 cups confectioners’ sugar, or as needed

1 tablespoon milk, or as needed (Optional)

Directions:

Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: Dust with shortening and 1-teaspoon flour two 8-inch cake pans.

Step 3: In a mixing bowl, add 1/2 cup of butter and beat it using an electric mixer until well mixed.

Step 4: Add white sugar and beat until well combined.

Step 5: Add eggs gradually and beat every addition.

Step 6: Add vanilla extract and beat until well mixed.

Step 7: In another mixing bowl, add flour, baking powder, baking soda, cinnamon, and salt. Whisk until well mixed.

Step 8: Transfer about 1/3 of the flour mixture into the creamed mixture as well as 3/4 cup of milk. Beat until well combined.

Step 9: Transfer the batter into the prepared pans.

Step 10: Place the pans inside the preheated oven and bake for 25 to 30 minutes or until a toothpick comes out clean after inserting it in the middle.

Step 11: Remove from the oven and let them sit on a wire rack to cool at room temperature.

Step 12: In a mixing bowl, add 1/2 cup of butter and beat using an electric mixer until well mixed. Add honey and 1 teaspoon of vanilla extract, then beat again until well combined.

Step 13: Add the confectioners’ sugar into the creamed butter and stir until well blended. Add 1 tablespoon of milk if needed.

Step 14: Place about 1/3 of icing over the cake and spread it. Top it with the other cake and spread the rest of the icing over the cake.

Coconut-Coated Chocolate Rum Balls

Growing up, I have always been a huge fan of these amazing Rum balls! I don’t know why my parents let me eat them, but I turned out to be just fine though. If you want, you can skip the rum, but I assure you that it’s the best part of this recipe. Give it a try and enjoy!

Ingredients:

1 (9 ounces) package arrowroot biscuits (such as Arnott’s® Milk Arrowroot™)

1 (14 ounces) can reduced-sugar sweetened condensed milk (such as Nestle®)

½ cup unsweetened cocoa powder (such as Hershey’s®)

½ cup finely shredded unsweetened coconut

2 tablespoons rum (optional)

¾ cup finely shredded unsweetened coconut

Directions:

Step 1: In a resealable plastic bag, add the biscuits and crush them into even sizes using a rolling pin.

Step 2: Transfer the crushed biscuits into a large mixing bowl.

Step 3: Add cocoa powder, 1/2 cup of shredded coconut, condensed milk, and rum. Stir until well mixed and thick.

Step 4: In a shallow bowl, add about 3/4 cup of shredded coconut.

Step 5: Form small balls out of the dough.

Step 6: Put the balls on a prepared tray and place it inside the fridge for 1 hour or until firm.

Step 7: Serve and enjoy!

Notes:

For this recipe, you can use vanilla wafers, sweet cookies, or plain chocolate cookies.

If you have a food processor, you can use it to crush the biscuits instead of a resealable bag.

Rum is optional because you might want to serve it to kids.

You can also use bourbon or whisky instead of rum.

Baked Chicken Nuggets

My kids could not get enough of these awesome Chicken nuggets! As simple as ketchup mixed with mayonnaise as a dip is perfect! What I love about this recipe is that you don’t need to fry them. I don’t know about you but I am not a huge fan of frying. For this recipe, all you need to do is to coat the chicken with the seasonings and place them inside the oven to bake. In less than an hour, you will have the juiciest and luscious Chicken nuggets ever! Feel free to add more ingredients if you prefer. May you all have a blessed day, friends. Enjoy!

Ingredients:

3 skinless, boneless chicken breasts

1 cup Italian seasoned bread crumbs

½ cup grated Parmesan cheese

1 teaspoon salt

1 teaspoon dried thyme

1 tablespoon dried basil

½ cup butter, melted

Directions:

Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.

Step 2: In a medium mixing bowl, add the cut 1 1/2-inch sized chicken breasts.

Step 3: Add the cheese, bread crumbs, thyme, basil, and salt. Stir until well mixed.

Step 4: In a small mixing bowl, add the melted butter.

Step 5: Dip the chicken pieces into the melted butter and next to the breadcrumb mixture.

Step 6: Place the coated chicken into a cookie sheet sprayed with cooking oil.

Step 7: Place it inside the preheated oven and bake for 20 minutes or until crispy and golden brown.

Pumpkin Cinnamon Rolls with Cream Cheese Frosting

These rolls are best served with hot coffee! Don’t get intimated with the number of steps because I assure you that it’s going to be worth it! Try it now and be amazed by how awesome these rolls taste. Enjoy!

Ingredients:

¼ cup unsalted butter

2 ¼ teaspoons active dry yeast

¾ cup Almond Breeze Original OR any Almond Breeze Almond-Cashew Blend

½ teaspoon granulated sugar

3 cups bread flour, plus more for dusting

2 tablespoons dark brown sugar

1 ½ teaspoon ground cinnamon

¼ teaspoon ground ginger

1 pinch ground nutmeg

1 pinch ground cloves

½ teaspoon salt

1 egg

½ cup pumpkin puree

Filling:

¼ cup butter softened

⅔ cup packed dark brown sugar

2 tablespoons ground cinnamon

Frosting:

4 ounces light plain cream cheese

½ cup powdered sugar

½ teaspoon vanilla

¼ teaspoon ground cinnamon

2 teaspoons Almond Breeze Unsweetened Original or Almond Cashew Original

Directions:

Step 1: Place a small saucepan and turn the heat to medium.

Step 2: Add about 1/4 cup of butter and allow it to melt and caramelize.

Step 3: Remove from the heat right away and place it in a bowl. Allow it to cool at room temperature.

Step 4: Add the granulated sugar, warm almond milk, and yeast in the bowl of an electric mixer. Let it sit for 5 minutes or until the yeast has risen.

Step 5: In a large mixing bowl, add the ginger, 2 tablespoons of brown sugar, cinnamon, cloves, nutmeg, and salt. Whisk until well mixed.

Step 6: Add half of the flour mixture into the yeast as well as the egg, pumpkin puree, and the caramelized butter. Stir until well mixed.

Step 7: Add the other half of the flour mixture and stir until well mixed.

Step 8: Mix using the hook of the mixer for 8 minutes at medium-low speed or knead for 10 minutes.

Step 9: Apply cooking spray in a large mixing bowl. Add the dough and coat it with the oil.

Step 10: Cover the bowl with plastic wrap followed by a towel. Let it sit in a warm area for 1 1/2 hours to rise.

Step 11: In a small mixing bowl, add 2/3 cup of brown sugar, 1/4 cup of soft butter, and cinnamon.

Step 12: Place the risen dough on a floured flat surface. Roll the dough into 15×9-inch rectangle.

Step 13: Spread the butter and sprinkle the cinnamon-sugar mixture on top of the dough. Make sure to leave a 1/2-inch border.

Step 14: Roll up the dough and seal. Slice it into 12 pieces using a serrated knife.

Step 15: Brush butter on the bottom of a 9×13-inch pan. Lay the rolls and cover the pan with plastic wrap, then allow it to rise for 45 minutes.

Step 16: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 17: Place the pan inside the oven and bake for 5 to 10 minutes or until the colour turns slightly brown.

Step 18: In a small mixing bowl, add powdered sugar, cream cheese, cinnamon, 2 tablespoons of almond milk, and vanilla. Stir until well mixed.

Step 19: Spread the frosting over the warm rolls.

Step 20: Serve and enjoy!

Ingredients

  • ¼ cup unsalted butter
  • 2 ¼ teaspoons active dry yeast
  • ¾ cup Almond Breeze Original OR any Almond Breeze Almond-Cashew Blend
  • ½ teaspoon granulated sugar
  • 3 cups bread flour, plus more for dusting
  • 2 tablespoons dark brown sugar
  • 1 ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • 1 pinch ground nutmeg
  • 1 pinch ground cloves
  • ½ teaspoon salt
  • 1 egg
  • ½ cup pumpkin puree
  • Filling:
  • ¼ cup butter softened
  • ⅔ cup packed dark brown sugar
  • 2 tablespoons ground cinnamon
  • Frosting:
  • 4 ounces light plain cream cheese
  • ½ cup powdered sugar
  • ½ teaspoon vanilla
  • ¼ teaspoon ground cinnamon
  • 2 teaspoons Almond Breeze Unsweetened Original or Almond Cashew Original

Instructions

Step 1: Place a small saucepan and turn the heat to medium.

Step 2: Add about 1/4 cup of butter and allow it to melt and caramelize.

Step 3: Remove from the heat right away and place it in a bowl. Allow it to cool at room temperature.

Step 4: Add the granulated sugar, warm almond milk, and yeast in the bowl of an electric mixer. Let it sit for 5 minutes or until the yeast has risen.

Step 5: In a large mixing bowl, add the ginger, 2 tablespoons of brown sugar, cinnamon, cloves, nutmeg, and salt. Whisk until well mixed.

Step 6: Add half of the flour mixture into the yeast as well as the egg, pumpkin puree, and the caramelized butter. Stir until well mixed.

Step 7: Add the other half of the flour mixture and stir until well mixed.

Step 8: Mix using the hook of the mixer for 8 minutes at medium-low speed or knead for 10 minutes.

Step 9: Apply cooking spray in a large mixing bowl. Add the dough and coat it with the oil.

Step 10: Cover the bowl with plastic wrap followed by a towel. Let it sit in a warm area for 1 1/2 hours to rise.

Step 11: In a small mixing bowl, add 2/3 cup of brown sugar, 1/4 cup of soft butter, and cinnamon.

Step 12: Place the risen dough on a floured flat surface. Roll the dough into 15x9-inch rectangle.

Step 13: Spread the butter and sprinkle the cinnamon-sugar mixture on top of the dough. Make sure to leave a 1/2-inch border.

Step 14: Roll up the dough and seal. Slice it into 12 pieces using a serrated knife.

Step 15: Brush butter on the bottom of a 9x13-inch pan. Lay the rolls and cover the pan with plastic wrap, then allow it to rise for 45 minutes.

Step 16: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 17: Place the pan inside the oven and bake for 5 to 10 minutes or until the colour turns slightly brown.

Step 18: In a small mixing bowl, add powdered sugar, cream cheese, cinnamon, 2 tablespoons of almond milk, and vanilla. Stir until well mixed.

Step 19: Spread the frosting over the warm rolls.

Step 20: Serve and enjoy!

Southern Smothered Pork Chops in Brown Gravy

Take a break from the usual fried pork chops and give this recipe a try! The gravy alone is more than enough for me! I always serve this with mashed potatoes or steamed rice. Oh, man, you need this in your life! Satisfy your cravings now!

Ingredients:

4 tablespoons butter

1 onion, thinly sliced and quartered

4 cloves garlic, minced

4 tablespoons all-purpose flour

2 cups beef broth

1 ½ cups sliced baby Bella mushrooms, or more to taste

1 tablespoon chopped fresh parsley

4 centre-cut pork chops

½ teaspoon salt, or to taste

¼ teaspoon ground black pepper, or to taste

Directions:

Step 1: Place a 3-quart saucepan on the stove and turn the heat to medium-low.

Step 2: Add the butter and allow it to melt.

Step 3: Add the garlic and onion. Stir and cook for 7 to 10 minutes or until caramelized. Remove the garlic and onion and set aside.

Step 4: Add the flour and cook for 7 to 10 minutes or until the colour turns brown.

Step 5: Remove the saucepan from the heat and add the broth. Stir until well mixed.

Step 6: Put the onion and garlic back in the saucepan as well as the mushrooms and parsley.

Step 7: Allow the mixture to boil while stirring from time to time. Remove from the heat.

Step 8: Apply cooking spray in a large skillet. Place it on the stove and turn the heat to medium-high.

Step 9: Place the pork chops on a plate and season both sides with salt and pepper.

Step 10: Lay the pork chops into the skillet and cook for 5 to 7 minutes on each side or until done.

Step 11: Add the gravy mixture and cook for another 30 to 40 minutes or until tender. You can also use a thermometer to check the doneness of the chops. It should read 63 degrees C or 145 degrees F.

Step 12: Remove the chops from the heat.

Step 13: Serve and enjoy!

Notes:

Only use 3/4-inch thick pork chops.

If you do not have butter, you can use margarine instead.

Easy Shepherd’s Pie with Garlic Romano Potatoes

Meaty, cheesy, and loaded! This incredible Pie will surely satisfy your very soul! This Pie is pretty heavy in the tummy so you will be full for the rest of the day! Give it a try, friends. Enjoy!

Ingredients:

1 pound ground beef

½ cup chopped onion

1 teaspoon dried rosemary

1 teaspoon dried basil

1 (8 ounce) can tomato sauce

1 (14.5 ounce) can diced tomatoes, drained

2 (15 ounce) cans mixed vegetables, drained

2 pounds red potatoes

½ cup butter

½ cup grated Romano cheese

2 tablespoons minced garlic

1 teaspoon salt

1 teaspoon dried oregano

⅓ cup milk

Directions:

Step 1: Prepare the oven and preheat to 190 degrees C or 375 degrees F.

Step 2: Apply cooking spray in a medium baking dish.

Step 3: Place a skillet on the stove and turn the heat to medium.

Step 4: Add the beef, onion, basil, and rosemary.

Step 5: Cook for several minutes until the beef turns brown and greasy.

Step 6: Discard the beef grease and add the diced tomatoes, tomato sauce, and mixed veggies. Stir and cook until done.

Step 7: Transfer the mixture into the prepared baking dish.

Step 8: In a pot, add water and potatoes. Cover the pot and cook for 10 minutes or until fork-tender.

Step 9: Remove from the heat and drain the water.

Step 10: Add the butter, garlic, Romano cheese, oregano, milk, and salt into the pot. Mash all the ingredients until well combined.

Three basic ingredients to make the best appetizer! These Sausage Cheese Balls are so luscious! You will crave these incredible treats for sure. You will enjoy these bad boys in less than 30 minutes. How awesome is that? No need to cook it in oil. All you need to do is to mix the three ingredients, form it into balls, and bake. As easy as that! Feel free to add more ingredients as you go along with the baking process. For example, I have tried adding crumbled bacon in it and it was divine! It was so satisfying! I usually serve these balls with mustard and mayonnaise. By the way, try adding chilli powder if you want that “kick” in every bite. I highly recommend it! Invite friends over and serve these with an iced cold beer. You will have a night to remember for sure! I hope you all love and appreciate this simple recipe. Enjoy!

Chocolate Chip Cookie Dough Fudge

This what I call an overload of happiness! Every bite is amazing. I love how all the ingredients complement well with each other, especially the cookie dough. Oh, man, give this one a try. You are so in for a treat!

Ingredients:

⅓ cup margarine, melted

⅔ cup light brown sugar, packed

1 pinch salt

¾ cup all-purpose flour

¼ cup semisweet mini chocolate chips

1 (8 ounces) package cream cheese, softened

1 (16 ounces) package confectioners’ sugar

1 cup semisweet mini chocolate chips, melted

1 teaspoon vanilla extract

Directions:

Step 1: Line with aluminium foil a 9×9-inch baking dish.

Step 2: In a medium mixing bowl, add the melted margarine, brown sugar, salt, and cookie dough pieces. Stir until well mixed.

Step 3: Add the flour and stir until it turns into a dough.

Step 4: Knead 1/4 cup of chocolate chips to make a half-inch to 3/4 thick dough. Cover with a plastic wrap and use your hands form into a square.

Step 5: Freeze for at least 10 minutes until cold and stiff before slicing into half-inch square parts. Chill.

Step 6: In a bowl, add the cream cheese and confectioners’ sugar. Mix until smooth before stirring in the melted chocolate chips followed by the vanilla extract.

Step 7: Add in the cookie dough and lightly fold.

Step 8: Place the candy into the prepared dish and spread evenly. Place in the fridge for at least an hour or until firm.

Step 9: Take the candy out of the foil-lined dish and split into squares.
