These Cashew Chicken Lettuce Wraps are simply delicious! In just half an hour, these delicious treats are ready to be devoured! I am so excited to share this recipe with you because I know that you are going to love it! These wraps can be served as appetizers or a main dish! I can’t think of any reason why you shouldn’t try this recipe! All you need are these basic ingredients and easy steps, and you are good to go!
Ingredients:
¾ c unsalted cashews
5 green onions, chopped, divided
1 head of green leafy lettuce (romaine, bib, or butter)
½ tsp freshly grated ginger
2 tsp sesame oil or substitute canola oil
2 tbsp low-sodium soy sauce
¼ c hoisin sauce
1 tbsp rice vinegar
1 c low-sodium chicken broth
1-2 tsp Sriracha hot sauces to taste
2 tbsp cornstarch
2 lbs. of boneless, skinless chicken breasts, cut into small pieces
salt and freshly ground black pepper
3 cloves garlic, minced
Directions:
Sprinkle salt and pepper over the chicken pieces, then toss until well coated.
Add soy sauce, chicken stock, hoisin sauce, cornstarch, ginger, and vinegar into a mixing bowl. Stir until well blended.
Place a large skillet on the stove and turn the heat to medium.
Add the chicken into the hot skillet, then cook for about 5 minutes or until brown.
Add garlic, then sauté for a minute or until aromatic.
Turn the heat down to low, then pour in the sauce. Stir until well blended and thick.
Add sriracha, most of the green onions, and cashews. Stir until well mixed.
Serve right away in cold lettuce cups. Enjoy!
Note:
Garnish with the rest of the chopped green onions.
