Ingredients
2 lbs chuck steak, sliced thinly
2 cloves garlic, peeled and minced
1 tbsp canola oil
1 onion, peeled and chopped
4 large Roma tomatoes, chopped
1 jalapeno pepper, seeded and minced
2 medium potatoes, peeled and cubed
salt and pepper to taste
1 ½ c. water or beef broth
How to make Carne Guisada
Step 1: Heat the oil in a Dutch oven or wide skillet over medium heat. Once hot, add the onions and garlic. Saute until tender. Next, add the beef and continue to cook until light brown.
Step 2: To the skillet, add the tomatoes. Cook until softened and the tomatoes release their juices, mashing the tomatoes using the back of a spoon as it cooks.
Step 3: Pour in the water or broth. Bring everything to a boil and make sure to skim the scum that floats on top. Then, add the chili peppers.
Step 4: Decrease the heat and put the lid on. Let everything simmer for about 40 to 50 minutes or until the beef is tender. As needed, add more water in half-cup increments.
Step 5: Add the potatoes to the skillet and cook further until the potatoes are tender and the sauce has reduced and thickened. This takes another 8 to 10 minutes.
Step 6: To taste, season the Carne Guisada with salt and pepper. Enjoy hot!
Notes:
To ensure fast and even cooking, cut the beef into thin, uniform slices. For a more tender chew, slice the beef across the grain.
Fresh tomatoes are great, but if needed, you can use tomato sauce instead.
