Ingredients:
4 medium yellow onions (about 1 ½ lbs. total)
2 tbsp dry white wine, reduced-sodium chicken broth, or water
⅓ c balsamic vinegar
1 tbsp sugar
2 tbsp butter, melted
1 tbsp olive oil
Fresh thyme leaves (optional)
¼ tsp salt
⅛ tsp freshly ground black pepper
Directions:
Prepare the oven and preheat to 425 degrees F.
Add olive oil and butter into a 3-quart rectangle baking dish, then spread them evenly.
Add sugar, vinegar, pepper, wine, and salt. Whisk everything until well blended.
Peel the onion, then slice it into two from the roots to the top. Put them into the prepared baking dish with the cut parts facing up and cover them with aluminium foil.
Place the baking dish inside the preheated oven and bake for about 30 minutes.
Remove the foil cover, then flip the onions with a tong.
Bake the onions for another 20 minutes or until they caramelize.
Remove from the oven and sprinkle freshly chopped parsley on top to garnish.
Serve and enjoy!
Notes:
You can make these Caramelized Balsamic Onions ahead of time. Just let them cool completely at room temperature. Place them in an airtight container, then place them inside the fridge to chill for several hours up to 24 hours.
Reheat in the oven at 325 degrees F for about 40 minutes.
