Love, just pure love! These Caramel Cornflake Crunch Brownies just became my favourite! I am so happy right now! Ingredients:
Brownies:
175 grams unsalted butter
3 large Eggs
200 grams plain flour
¼ teaspoon salt
265 grams golden caster sugar
200 grams dark chocolate
Caramel:
100 grams unsalted butter
1 teaspoon vanilla
½ teaspoon salt
200 ml double cream
300 grams caster sugar
125 grams cornflakes
Directions:
Brownies:
Apply cooking spray in an 8×8-inch square tin, then line it with parchment paper.
Prepare the oven and preheat to 400 degrees F or 200 degrees C.
Finely chop the chocolate, then place them into a heat-proof bowl.
Place the bowl inside the microwave and heat the chocolate until melted completely.
Add the melted butter on top of the chocolate pieces, then stir until well blended.
Add the sugar and stir until well blended.
Add salt and flour, then whisk until well blended.
Add the eggs gradually and beat every addition until well blended.
Transfer the mixture into the prepared baking tin and spread it evenly.
Place it inside the preheated oven and bake for about 35 minutes or until a toothpick comes out clean after inserting it in the middle.
Remove from the oven and allow it to cool completely at room temperature.
Caramel:
Place a saucepan on the stove and turn the heat to medium-high.
Add the sugar, then stir and cook for minutes until caramelized.
Remove the pan from the stove, then add the butter, vanilla, cream, and salt. Stir until well blended.
Put it back on the stove, then cook the caramel for about 10 minutes.
Turn off the heat, then add the cornflakes. Stir until well blended.
Pour the mixture on top of the brownies and spread it evenly until well coated. Allow it to cool completely at room temperature.
Slice into even pieces.
Serve and enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 5 days.
