These heavenly treats are going to be the highlight of your day, I’m telling you! The rich cheesy flavour in every bite is just too perfect. Enjoy!
Ingredients:
2 boneless, skinless chicken breasts
olive oil
salt, to taste
pepper, to taste
8 ounces mozzarella cheese (225 g), 1 package
1 c tomato (200 g), diced
1 tomato, sliced
15 leaves fresh basil
BALSAMIC REDUCTION:
1 c balsamic vinegar (240 mL)
¼ c honey (85 g)
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Place a saucepan on the stove and turn the heat to high.
Step 3: Add the honey and balsamic vinegar. Stir until well mixed and simmer its volume reduces to about 80 ml. Remove from the heat.
Step 4: Slice each chicken breast into two. Make sure to cut it horizontally.
Step 5: Cover the sliced chicken breasts with plastic wrap and gently pound each to about ½-inch thick.
Step 6: Drizzle olive oil on top of the chicken strips and sprinkle salt and pepper as well to season.
Step 7: Top each chicken slice with 2 slices of mozzarella cheese, followed by ¼ cup of sliced tomatoes, then 3 pieces of basil.
Step 8: Roll and make sure that the fillings are intact inside.
Step 9: Repeat steps 7 and 8 to the rest of the ingredients.
Step 10: Apply cooking spray in a baking dish.
Step 11: Arrange the roll-ups onto the prepared baking dish and drizzle olive oil and sprinkle salt and pepper on top.
Step 12: Place the baking dish inside the preheated oven and bake for about 15 to 20 minutes or until done.
Step 13: Remove from the oven and top each roll-up with 1 slice of mozzarella, and then put it back inside the oven. Broil for 5 to 10 minutes or until the cheese has melted completely.
Step 14: Remove from the oven and allow the chicken roll-ups to sit at room temperature to cool for about 10 minutes.
Step 15: Garnish each chicken with a slice of tomato and basil.
Step 16: Drizzle balsamic vinegar on top.
Step 17: Serve and enjoy!
