This pineapple pie is the easiest recipe for the pie that I have ever tried! I love how a simple can of pineapple can become something very delicious! Give this one a try and I hope you love it too. Feel free to add more ingredients to this recipe because I feel like it can do better. Maybe, I will learn a thing or two from you. This recipe is best eaten warm or chilled. If you are serving it chilled, make sure not to place the pie inside the fridge right after you remove it from the oven. Let it sit first at room temperature to cool then put it inside the fridge. Ingredients:
1 recipe pastry for a 9-inch double-crust pie
¾ cup white sugar
3 tablespoons cornstarch
1 (20 ounces) can crush pineapple with juice
1 tablespoon lemon juice
2 tablespoons milk
1 tablespoon white sugar
Directions:
Step 1: Ready the oven and preheat to 220 degrees C or 425 degrees F.
Step 2: In a medium mixing bowl, add in the cornstarch, sugar, lemon juice, and pineapple with juice. Stir until well mixed.
Step 3: Place a medium saucepan on the stove and turn the heat to medium.
Step 4: Pour in the mixture into the saucepan and allow it to boil for 1 minute or until it becomes thick. Stir continuously for a smooth texture.
Step 5: Remove from the heat and allow it to cool a little.
Step 6: Transfer the mixture into the pie pan lined with pastry.
Step 7: Cover and seal and create steam vents I’m the crust. Brush the top with milk and sprinkle sugar.
Step 8: Place inside the preheated oven and bake for 35 minutes or until cooked through.
Step 9: Remove from the oven and let it sit at room temperature to cool.
Step 10: Serve and enjoy!
