Ingredients:
1 tablespoon cooking oil
1 teaspoon smoked paprika
14 ounces Andouille sausage
¼ teaspoon garlic powder
¼ teaspoon onion powder
1 bell pepper
½ teaspoon dried oregano
⅛ teaspoon cayenne pepper
½ teaspoon dried thyme
1 c long-grain white rice
1 15 ounces can fire-roasted diced tomatoes
2 green onions, sliced
1.5 c chicken broth
⅛ teaspoon freshly cracked black pepper
Directions:
Slice into a ½-inch thick sausage.
Place a deep skillet on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add the sausage, then cook until crumbly and brown.
Meanwhile, slice the bell pepper into thin pieces.
Add the bell pepper into the skillet and sauté until soft.
Add all the spices and stir until well mixed. Sauté for another minute.
Add the roasted tomatoes, chicken broth, and rice. Stir until well mixed and make sure to scrape the bottom of the skillet to get the brown bits.
Cover the skillet with a lid, then turn the heat to medium-high and let the mixture boil.
Reduce the heat down to low and simmer for about 20 minutes.
Turn off the heat and allow it to cool for a few minutes.
Garnish each serving with freshly chopped green onions.
