Ingredients:
1 Red Bell Pepper
1 Yellow Bell Pepper
1 tsp Fresh Lemon Juice
2 tbsp butter
500g Boneless Chicken Breast cut into small pieces
2.5 tbsp Cajun Seasoning
1 medium Zucchini, Cut into chunks
salt to taste
Directions:
Place a skillet on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the Cajun seasoning, then stir for about 10 seconds.
Add the boneless chicken cubes into the hot skillet, then toss until well coated with the Cajun seasoning. Stir and cook for about 5 minutes.
Add the vegetables into the skillet, then stir and cook again for about 3 minutes. Add salt if needed.
Remove the skillet from the heat, then drizzle lemon juice over the chicken. Toss until well coated.
Serve right away with rice. Enjoy!
Note:
For this recipe, I used homemade Cajun seasoning.
Place any leftovers in an airtight container, then place them inside the fridge. Reheat in the oven.
