Ingredients:
3 tablespoons olive oil
1 ½ pound boneless chicken thighs, cut into small pieces
1 medium cabbage
2 medium carrots (shredded)
1 tablespoon paprika
2 tablespoons tomato paste
1 c chicken stock
salt, pepper
1 tablespoon hot sauce optional
chopped fresh parsley to garnish
Directions:
Place a large pan on the stove and turn the heat to medium-high.
Add olive oil and allow it to become hot.
Add the chicken thighs and cook each side for about 5 minutes or until they turn brown.
Slice the cabbage into coleslaw-like cuts.
In the pan with the chicken thighs, add the tomato paste and paprika. Stir until well mixed. Cook for 5 more minutes.
Add the sliced cabbage. Stir and cook for another 5 minutes.
Add the chicken stock and shredded carrots. Season with salt and pepper to taste. Stir again until well combined.
Simmer for about 40 minutes or until done.
Add a tablespoon of hot sauce and stir until well blended.
Sprinkle parsley on top.
Serve hot and enjoy!
