These delicious treats are my ultimate comfort food! Take a break from the traditional finger foods and try this recipe! All you need are these very basic ingredients, simple steps, and you are good to go! Ingredients:
2 large zucchini, cut into ½ inch slices
¾ c margarine
2 Eggs, beaten
salt and pepper to taste
2 c all-purpose flour
Directions:
In a medium mixing bowl, crack the eggs and beat them until creamy.
In another mixing bowl, add the flour.
Coat each zucchini slice into the bowl with beaten eggs, then into the flour. Make sure to coat each well and shake off any excess.
Place a large skillet on the stove and turn the heat to medium.
Add margarine and allow it to melt.
Add the coated zucchini slices in batches and fry each side for about 3 minutes or until they turn brown. Make sure to season with salt and pepper to taste.
Repeat the process to the rest of the zucchini slices.
Place them onto a clean plate.
Serve and enjoy!
