Ingredients:
1 head of cauliflower, cut into florets
¾ c flour
1 tsp ground paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp salt
¾ c buttermilk
2 tbsp butter, melted
⅓ c Buffalo Sauce (we used Frank’s!)
Directions:
Step 1: Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Step 2: Line with parchment paper two baking sheets.
Step 3: Add the flour, spices, and salt to a large mixing bowl. Whisk until well mixed.
Step 4: Add in the buttermilk and stir until well blended and thick.
Step 5: Add in the cauliflower florets and toss until well coated with the batter.
Step 6: Arrange the coated cauliflower onto the prepared baking sheets. Make sure to leave a space between each floret.
Step 7: Place the baking sheet inside the preheated oven and bake for about 20 minutes, then flip to cook the other side for another 20 minutes.
Step 8: Meanwhile, to make the buffalo sauce, mix the melted butter and buffalo sauce.
Step 9: Remove the florets from the oven and add them into the bowl with the sauce. Toss until everything is well coated by the sauce.
Step 10: Serve and enjoy!
Notes:
Feel free to make your buttermilk. Just mix regular milk with 1 tablespoon of apple cider vinegar. Allow it to rest for about 5 minutes or until thick.
Feel free to use plant-based buttermilk if you want vegan buffalo cauliflower bites.
You can also use gluten-free flour instead of all-purpose flour.
