Ingredients:
2 tbsp Dijon mustard
¼ c brown sugar
salt and pepper, to season
1 ½ pound pork tenderloin
1 tbsp extra virgin olive oil
Brown Sugar Dijon Dipping Sauce:
2 tbsp mayonnaise
2 tbsp Dijon mustard
1 ½ to 2 tbsp brown sugar
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Sprinkle salt and pepper over the pork tenderloin, then rub in until well coated.
Place a skillet on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add the pork tenderloin, then sear each side for about 2 minutes or until brown. Transfer the tenderloin onto a baking pan.
Brush Dijon mustard over the tenderloin.
Sprinkle brown sugar on top, then massage the meat a bit.
Place it inside the preheated oven and bake for about 25 minutes or until done.
Remove from the oven and allow it to rest for a few minutes at room temperature. Slice into even pieces.
Serve with the Brown Sugar Dijon sauce. Enjoy!
For the Brown Sugar Dijon Dipping Sauce:
Add mayonnaise, Dijon mustard, and brown sugar into a mixing bowl. Stir until well blended.
