Ingredients:
54 oz. can of pork and beans
10 slices of bacon in half
1 chopped yellow onion
2 tsp of dry mustard
¼ c molasses
⅔ c of brown sugar
½ chopped green pepper
¼ c cider vinegar
4 tbsp of ketchup
Directions:
Prepare the oven and preheat to 325 degrees F.
Place a skillet on the stove and turn the heat to medium.
Add the bacon for a few minutes. Transfer the bacon onto a clean plate lined with paper towels to drain excess grease. Chop into small pieces.
In the same skillet with the bacon grease, add green pepper and onion slices. Saute for 5 minutes or until translucent.
Add the pork & beans, mustard, molasses, brown sugar, ketchup, and vinegar into the skillet. Stir until well blended and simmer for 1 minute.
Apply cooking spray to a baking pan.
Transfer the beans mixture into the prepared baking pan and spread it evenly.
Scatter the crispy bacon over the beans.
Place the baking pan inside the preheated oven and bake for about 2 to 3 hours or until done.
Remove from the oven and allow it to rest for a few minutes at room temperature.

Notes:
If you want to turn this into a vegetarian dish, then use pinto beans or navy beans instead of bacon.
Feel free to use jalapenos in exchange for bell pepper to give it a spicy taste!
You can also add cayenne pepper and garnish with jalapenos on top.
