Ingredients:
¼ c oil
2 tsp onion powder
½ red pepper, chopped
1 scotch bonnet seed was removed and chopped
2 tsp garlic powder
1 tbsp brown sugar
2 tsp browning
3 pounds of chicken thighs, boneless, skinless
½ green pepper chopped
4 garlic cloves, chopped
1 tsp paprika
1 yellow onion, chopped
3 spring onions, chopped
2 tbsp ketchup
1 c chicken broth
2 tsp salt or to taste
½ c water
1-inch ginger chopped
1 tsp dried thyme
½ tsp black pepper
¼ tsp allspice
Directions:
In a mixing bowl, add salt, browning, garlic powder, onion powder, black pepper, brown sugar, allspice, onions, ginger, green pepper, paprika, dried thyme, red pepper, scotch bonnet, and garlic cloves. Stir everything until well combined.
Add the chicken into the bowl with the seasonings, then rub each until all sides are well coated.
Cover the bowl with plastic, then place it in the fridge and marinate the chicken for an hour or overnight.
Remove the bowl from the fridge, then set aside the chicken, onions, ginger, peppers, garlic, and thyme.
Place a large skillet on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add the chicken into the hot skillet, then sear each side for about 2 minutes. Transfer onto a clean plate.
Add the peppers and onions into the empty skillet, then saute for 5 minutes or until soft.
Put the chicken back into the skillet together with ketchup, water, and chicken broth. Stir until well mixed.
Cover the skillet with the lid, then simmer everything for about 30 minutes. Make sure to stir from time to time.
Remove the cover and cook the chicken for another 10 minutes.
