This Broccoli Cheese Casserole is my favorite to go with pretty much anything! This will be the best side dish recipe you will ever try; I’m telling you! If you are having guests over or just a simple family dinner, you might as well give this one a try! I promise you; you won’t be disappointed at all. Enjoy!
Ingredients:
¼ c of butter, melted (½ stick)
2 large eggs, slightly beaten
½ medium onion, finely chopped
1 ½ c extra sharp cheddar cheese
4 c chopped broccoli
1 (10 oz.) can of cream of chicken soup
½ sleeve of Ritz crackers, crushed
1 c mayonnaise or miracle whip (we prefer mayo) Could also substitute Greek yoghurt or sour cream.
½ tsp salt
¼ tsp pepper
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Steam the broccoli for about 5 minutes or until fork-tender. I used a steaming basket for this.
Transfer the broccoli onto a cutting board, then chop it into small cuts. Put them into a mixing bowl.
Add eggs, soup, salt, pepper, butter, onion, and mayonnaise over the broccoli. Toss everything until well combined.
Add ¾ cup of cheese, then stir until well combined.
Transfer the broccoli mixture into an 8×8-inch square baking dish and spread it evenly.
Sprinkle the rest of the cheese over the broccoli mixture together with the Ritz crackers.
Place the baking dish inside the preheated oven and bake for about 30 minutes or until the cheese turns golden brown.
Remove from the oven and allow the Broccoli Cheese Casserole to rest for a few minutes at room temperature.
Serve and enjoy!
Note:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 4 to 5 days or 3 months in the freezer. Reheat in the microwave.
