Ingredients
¾ c. broccoli, chopped
½ c. shredded cheddar cheese
4 small chicken breast
2 tsp Cajun seasoning
2 oz. cream cheese – softened
How to make Broccoli Cheddar Stuffed Chicken (low carb + keto)
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Place the broccoli, cheddar cheese, and softened cream cheese in a small bowl. Mix well and set aside.
Step 3: so that the breast folds open, slice each chicken breast lengthwise. Make sure not to slice all the way.
Step 4: On one side of the chicken, spread the broccoli-cheddar mixture. Then, fold the other side over and secure using a toothpick.
Step 5: On each side of the chicken, lightly sprinkle the Cajun seasoning.
Step 6: In a greased baking dish, place the stuffed chicken. Put in the preheated oven and bake for about 25 to 30 minutes or until the chicken is completely cooked.

For this recipe, I use fresh, raw, chopped broccoli.
