Perfect to serve over rice, this Not So Boozy Bourbon Chicken is surely a must-try! The sauce is the sure winner for me. It is so rich in flavors so don’t forget to spoon it over each serving! This dish is ready in just 35 minutes. Enjoy!
Ingredients:
1 tbsp olive oil
2 tsp grated ginger
2 tsp minced garlic
1 tbsp apple cider vinegar
⅓ c light brown sugar
⅓ c low sodium soy sauce
2 lbs. boneless, skinless chicken thighs, cut into 1– inch chunks
½ c apple juice
½ tsp ground black pepper
Optional – sliced green onions or chives to garnish
¼ c water
1 tbsp cornstarch
Directions:
Add water, ginger, apple juice, vinegar, black pepper, soy sauce, garlic, and brown sugar into a mixing bowl. Stir everything until well blended.
Place a large skillet on the stove and turn the heat to medium-high.
Add 1 tbsp of olive oil and allow it to become hot.
Add the chicken into the hot skillet, then cook all sides for about 8 minutes or until brown.
Add the soy sauce mixture over the chicken, then stir until combined.
Reduce the heat to medium-low, then simmer the mixture for about 15 minutes.
Mix 3 tbsp of cold water and cornstarch to make the slurry, then pour it over the chicken mixture. Stir until well blended. Simmer for a few more minutes until the texture of the sauce becomes thick.
Remove the skillet from the stove.
Sprinkle each serving with chopped green onions.
Serve the Not So Boozy Bourbon Chicken over rice. Enjoy!
