Ingredients:
2 tbsp sesame oil
4 chicken breasts
3 tsp garlic minced
½ tsp ground ginger
½ c soy sauce
½ tsp onion powder
¼ c water
¼ c ketchup
¼ c apple juice
⅔ c brown sugar
1 tbsp cornstarch + 1 tsp
½ tsp pepper
⅛ to ¼ tsp red pepper flakes optional
Directions:
Roughly chop the chicken into small cuts.
Use paper towels to pat dry the chicken slices.
Add the chicken into a mixing bowl, then add 1 tbsp of cornstarch and toss until well coated.
Place a large skillet on the stove and turn the heat to medium.
Add sesame oil and allow it to become hot.
Add the chicken pieces and cook until they turn golden brown.
Meanwhile, add apple juice, ketchup, water, soy sauce, ground ginger, minced garlic, 1 tsp cornstarch, and pepper into a mixing bowl. Stir until well blended.
Pour the sauce into the skillet and scrape the bottom to get the browned bits. Allow the sauce to boil.
Reduce the heat to low and simmer everything for about 7 minutes. Make sure to stir from time to time.
Remove the skillet from the heat and let it rest for about 5 minutes or until the texture of the sauce becomes thick.
Serve and enjoy!
Note:
I love serving this Bourbon Chicken over regular rice or fried rice.
