This Bourbon Chicken is so good that this was probably my third time to cook it this week! I got this recipe from the internet and I am so glad that I gave it a try because I never would have known how awesome this is! Feel free to modify this very simple recipe to your preference. Ingredients:
2 tbsp sesame oil
4 chicken breasts
½ tsp onion powder
¼ c apple juice
½ tsp pepper
½ c soy sauce
¼ c water
¼ c ketchup
½ tsp ground ginger
⅔ c brown sugar
1 tbsp cornstarch + 1 tsp
3 tsp garlic minced
⅛ to ¼ tsp red pepper flakes optional
Directions:
Chop the chicken breasts into small cuts.
Use paper towels to pat them dry.
Add the chicken pieces into a large mixing bowl, then add 1 tbsp cornstarch. Toss until well coated.
Place a large skillet on the stove and turn the heat to medium.
Add sesame oil and allow it to become hot.
Add the chicken and cook until golden brown.
Remove all the excess grease from the skillet.
Meanwhile, add apple juice, pepper, soy sauce, ketchup, brown sugar, water, minced garlic, 1 tsp cornstarch, and ground ginger into a mixing bowl. Stir until well mixed.
Add the sauce into the skillet over the chicken. Scrape the bottom of the skillet to get the brown bits. Allow the mixture to boil.
Turn the heat down to low and simmer for about 5 minutes or until the texture of the sauce becomes thick.
Serve over rice and enjoy!
Notes:
Make sure to use thawed chicken for a quick cooking time.
Feel free to add ¼ cup of bourbon instead of apple juice.
