Pork chops and a delicious sauce served over zucchini noodles, cauliflower rice, or steamed veggies! Nothing can beat that! Try this recipe and you will surely have the most satisfying meal today. Enjoy!
Ingredients:
2 tsp olive oil
2 tbsp butter
6 cloves garlic, finely minced
1 small yellow onion, minced
1 ¾ c half & half or heavy cream
3 c baby spinach
3 pork chops, boneless
⅓ c vegetable or chicken stock
1 tsp paprika
Fresh chopped parsley
1 tsp Italian seasoning
¼ c fresh grated Parmesan cheese, optional
1 tsp crushed red chili pepper flakes, optional
Salt and fresh cracked pepper, to taste
Directions:
Place a large skillet on the stove and turn the heat to medium-high.
Add oil and allow it to become hot.
Sprinkle salt, pepper, and paprika over the pork chops. Rub each until well coated.
Add the pork chops into the hot skillet, then sear each side for about 3 to 5 minutes or until nicely browned. Transfer the seared pork chops onto a clean plate.
In the same skillet, add butter and allow it to melt.
Add onion, garlic, red crushed chili pepper, and Italian seasoning. Sauté for a few minutes until soft and aromatic.
Add the chicken stock, then scrape the bottom of the skillet to get the browned bits. Stir until well blended.
Turn the heat down to low, then add half & half. Stir and allow the mixture to simmer. Add salt and pepper to taste.
Add the spinach, then cook until wilted.
Add Parmesan cheese, then stir until well blended. Simmer for another minute.
Put the pork chops back into the skillet, then toss until well coated with the delicious sauce.
Sprinkle freshly chopped parsley on top to garnish.
Serve right away over cauliflower rice, zucchini noodles, or steamed veggies. Enjoy!
Note:
Feel free to use white wine in exchange for stock.
