Blueberry desserts are my favorite! These Blueberry Pie Bars are an amazing treat bursting with fresh blueberries. To make this dessert, all you need are just a couple of readily available ingredients. If desired, you can substitute fresh blueberries for frozen ones. This blueberry pie, bar dessert is a classic! Even if you are not much of a pie maker, I am pretty sure that you’ll love this recipe! It is a no-fuss to make, super simple, and guarantees a tasty, mouthwatering pie you’ll ever make!
INGREDIENTS
Crust and topping:
¾ c. granulated sugar
¼ tsp salt
1 ½ c. all-purpose flour
1 tsp vanilla extract
¾ c. (1 ½ sticks) unsalted butter, chilled and cubed
Filling:
½ c. sour cream
2 large eggs
¾ c. granulated sugar
⅓ c. all-purpose flour
3 c. fresh blueberries
¼ tsp salt
How to make Blueberry Pie Bars
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using butter or nonstick spray, grease a 9 x 13-inch baking dish and set aside.
Step 2: For the crust, place the flour, sugar, salt, chilled butter, and vanilla in a large bowl. Beat using an electric mixer until crumbly.
Step 3: Reserve 1 c of the mixture and firmly press the rest of the mixture into the prepared baking dish. Place in the preheated oven and bake for about 15 minutes.
Step 4: In the meantime, make the filling. Place the eggs in a large clean bowl and beat using an electric mixer until frothy. Then, add the sugar along with the sour cream, flour, and salt. Mix well until completely blended. Next, fold in the blueberries.
Step 5: On top of the baked crust, evenly spoon the filling and sprinkle with the reserved mixture. Return to the oven and bake for another 45 to 55 minutes or until the top is golden brown.
Step 6: Remove from the oven when done and allow the bar to cool for an hour. Cut into bars and serve. Enjoy!
