Ingredients:
3 tablespoons butter, divided
3 Eggs, lightly beaten
1 large carrot, peeled and cubed
1 small white onion, chopped
3 cloves garlic, minced
4-5 cups cooked and chilled rice
1 cup frozen peas
4 green onions, thinly sliced
¼ cup soy sauce (plus more to taste)
2 teaspoons sesame oil
3 teaspoons oyster sauce
salt and pepper
Directions:
Step 1: Place a large skillet on the stove and turn the heat to medium.
Step 2: Add 1 tablespoon of butter and allow it to melt.
Step 3: Add the beaten eggs and cook for 40 seconds until scrambled, then place it on a clean plate.
Step 4: In the same pan, add the rest of the butter and allow it to melt.
Step 5: Add the onion and carrot. Cook until translucent.
Step 6: Add the garlic and sauté until aromatic.
Step 7: Adjust the heat up to medium-high and the cold rice and peas. Stir and cook for 4 minutes or until hot.
Step 8: Put the eggs back to the skillet as well as the soy sauce, green onions, oyster sauce, and sesame oil. Stir and cook for a few minutes.
Step 9: Sprinkle salt and pepper to taste.
Step 10: Remove the skillet from the heat.
Step 11: Serve hot and enjoy!
