Ingredients:
2 tbsp olive oil
3 cloves garlic
3 oz. shiitake mushrooms
1 ½ c cooked brown rice
4 large Eggs
½ c cashews
1 tsp dried sage
1 ½ c walnuts
1 yellow onion
3 oz. baby Bella mushrooms (aka cremini)
1 c cottage cheese
1 tsp dried marjoram
12 oz. Swiss cheese, grated
1 tsp kosher salt
½ tsp freshly ground black pepper
1 tsp dried thyme
2 tbsp chopped fresh flat-leaf parsley
Directions:
Refer to the directions provided on the package of the brown rice on how to cook it.
Prepare the oven and preheat to 190 degrees C 375 degrees F.
Scatter about ½ cup of cashews and 1 ½ cup of walnuts onto a baking sheet.
Place it inside the preheated oven and roast the cashews and walnuts for about 8 to 10 minutes. Remove from the oven and let them cool completely at room temperature, then finely chop.
Prepare the veggies. Mince the garlic, finely chop the onion and mushrooms.
Place a large skillet on the stove and turn the heat to medium.
Add 2 tbsp of olive oil and allow it to become hot.
Add the garlic and onion, then sauté until aromatic and soft.
Add the mushrooms, 1 tsp thyme, 1 tsp sage, and 1 tsp marjoram. Sauté until soft and aromatic. Remove everything from the skillet into a mixing bowl.
Add the toasted walnuts, parsley, cashews, 1 ½ cups of cooked rice, 12 oz. Swiss cheese, 1 tsp kosher salt, beaten eggs, 1 cup cottage cheese, and pepper. Stir until well combined.
Brush with butter, then line with parchment paper a 9-inch loaf pan.
Transfer the mixture into the prepared baking pan and spread it evenly.
Place it inside the preheated oven and bake for about an hour or until the top turns golden brown.
Remove from the oven and allow it to cool for at least 20 minutes at room temperature.
Invert the meatloaf and serve. Enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last for a few days or months inside the freezer.
