Healthy, easy, and simply the best! These Spinach Stuffed Shells never fail to make me satisfied all the time! This vegetarian food is what you just might need today. Enjoy!
Ingredients:
¼ c grated Parmesan cheese
1 Egg
15 oz. ricotta cheese
2 c shredded mozzarella cheese, divided
2 (10 oz.) packages of frozen chopped spinach, thawed
1 tbsp chopped fresh basil (or 1 tsp dried basil)
½ tsp garlic powder
½ tsp salt
1 (24 oz) jar marinara sauce (about 2 ½ c total)
1 (12 oz) package of jumbo pasta shells
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray to a 9×13-inch baking dish.
Add ½ of the marinara sauce into the prepared baking dish and spread it evenly. Make sure to cover the bottom of the baking dish entirely.
Refer to the directions provided on the package of the pasta on how to cook it. Drain and rinse with cold water to stop the cooking process.
Cover the spinach with a towel. Seal and squeeze to remove the moisture. Place the prepared spinach into a bowl.
Add Parmesan cheese, egg, salt, 1 ½ cups of mozzarella, garlic powder, and basil into the bowl with the spinach. Stir everything until well mixed.
Stuff the prepared shells with the spinach mixture.
Place the stuffed shells into the baking dish and arrange them in a single layer.
Pour the rest of the sauce on top of the stuffed shells and spread it evenly.
Sprinkle the rest of the mozzarella cheese on top.
Cover the baking dish with aluminium foil, then place it inside the preheated oven and bake for 30 minutes.
Remove the foil cover and continue baking for 10 more minutes or until the cheese turns golden brown.
