The gravy sauce of this dish is more than enough to let you know that you are in for a treat! Serve it over rice, noodles, or mashed potatoes, and you have yourself a meal to remember!
Ingredients:
FOR THE PORK CHOPS:
2 tbsp olive oil
1 lb. bone-in pork chops, 1-inch thick
¼ tsp fresh ground pepper
1 tsp poultry seasoning or seasoning salt
2 tbsp unsalted butter
FOR THE ONION GRAVY:
½ c low sodium chicken broth
1 large yellow onion, thinly sliced
A pinch of salt
¼ c heavy cream
½ tbsp chopped fresh thyme
3 cloves garlic, minced
1 tbsp unsalted butter
chopped fresh parsley for garnish
Directions:
Sprinkle seasoning salt and pepper over the pork chops. Rub each until well coated.
Place a large skillet on the stove and turn the heat to medium-high.
Add butter and oil, then allow them to become hot and stir until well blended.
Add the pork chops into the hot skillet, then sear each side for about 5 minutes or until they turn golden brown. Remove the pork chops from the skillet and transfer them onto a clean plate. Cover the pork chops to keep them warm.
Add 1 tbsp of butter into the same skillet and allow it to melt.
Add the onions and cook for about 12 minutes or until caramelized. Sprinkle a bit of salt over the caramelized onions to taste.
Add the fresh thyme and garlic, then sauté for a minute until aromatic.
Add the chicken broth, then stir until well blended. Make sure to scrape the bottom of the skillet to get the browned bits. (They will add amazing flavors to the dish!)
Add the heavy cream, then stir until well blended. Simmer the mixture for about a minute.
Put the pork chops back into the skillet, then toss until well coated with the delicious sauce.
Turn the heat down to medium-low, then cook the pork chops for 3 more minutes or until done.
Remove the skillet from the stove, then sprinkle freshly chopped parsley on top of the pork chops.
Serve and enjoy!
Notes:
Leftovers can last up to 3 to 4 days in the fridge.
