I highly recommend this recipe if you are having a special family dinner! This Sicilian Meatloaf is simply the best! Packed with a lot of flavors, you will surely enjoy every bite of it!
Ingredients:
¾ c Italian-style breadcrumbs
1 red bell pepper, finely chopped
½ c Parmesan cheese
2 cloves garlic, minced
marinara sauce
2 Eggs
12-15 large basil leaves
1 ¼ c either shredded mozzarella cheese
½ teaspoon pepper
1 small red onion, finely chopped
2 tablespoons tomato paste
1 teaspoon salt
2 tablespoons parsley, chopped
cooked pasta or zucchini noodles, if desired
1 tablespoon olive oil
about ¼-pound deli ham
2 pounds of ground beef
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Place a skillet on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Add the red bell pepper and onion into the hot skillet, then sauté for a few minutes until soft.
Add garlic and sauté for about a minute or until aromatic. Remove the skillet from the stove and allow the sauteed veggies to cool.
Add eggs, breadcrumbs, ground beef, Parmesan cheese, parsley, sauteed veggies, salt, tomato paste, and pepper into a large mixing bowl. Use your clean hands to mix everything until well incorporated.
Lay parchment paper onto a flat surface.
Add the mixture to the middle of the parchment paper and shape it into an 8×5-inch rectangle.
Add a layer of ham, cheese, and basil on top of the mixture. Make sure to leave a 1-inch space around the meatloaf. Roll the meatloaf and seal the sides.
Line parchment paper onto a baking sheet.
Lay the meatloaf onto the prepared baking sheet.
Place it inside the preheated oven and bake for about an hour.
Remove the meatloaf from the oven and allow it to rest for at least 10 minutes before slicing it into even servings.
Serve over pasta with marinara sauce on top. Enjoy!
