Family dinner is going to be awesome with this Shepherd’s Pie! Everybody gets a bite of it. Enjoy the delicious flavors of veggies, mashed potatoes, and ground beef in one pie!
Ingredients:
Mashed Potato Topping:
¼ to ½ c milk
salt and pepper to taste
¼ c sour cream
4 tbsp butter
2 lbs. potatoes, peeled and cut into big chunks
Filling:
1 tsp rosemary
1 bay leaf
½ c beef broth
1 tbsp tomato paste
2 cloves garlic, minced
½ tsp thyme
1 tbsp Worcestershire sauce
1 small onion, diced
2 c frozen peas, carrots, and corn medley
2 tbsp flour
1 lb. ground beef
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
In a pot with boiling water, add the potatoes and cook for a few minutes until easily pierced with a fork. Drain the water.
In a large bowl, add sour cream, salt, pepper, butter, cooked potatoes, and milk. Mash everything until well combined.
Place a large skillet on the stove and turn the heat to medium.
Add the ground beef into the hot skillet, then cook for a few minutes or until crumbly and brown.
Add the onions, then sauté for a few minutes until soft. Discard any accumulated fat from the ground beef.
Add 2 cups of frozen veggies into the skillet, then stir and cook for 5 minutes.
Add flour, then whisk and cook for a minute to remove the raw taste.
Add tomato paste, then cook for a minute. Stir until well blended.
Add bay leaf, rosemary, thyme, Worcestershire sauce, beef broth, and rosemary. Stir until well mixed. Bring the mixture to simmer.
Turn the heat down to low, then cook everything for about 10 minutes.
Pour the mixture into a 9×13-inch baking dish and spread it evenly. Remove the bay leaf and discard.
Add the mashed potatoes over the meat and spread it evenly.
Put the baking dish inside the preheated oven and bake the pie for about 30 minutes or until done.
