Whether you are having guests over or just a simple family dinner, this dish is perfect for both! Enjoy the flavors of both worlds with this recipe. Chicken and veggies, it surely is a must-try!
Ingredients:
chicken seasoning or chicken rub
½ tsp Italian seasoning or 1 tbsp fresh chopped herbs
1 chicken 3-4 lbs.
4 tbsp olive oil
3-4 c chopped vegetables (carrots, potatoes, onions, parsnips)
Directions:
Prepare the oven and preheat it to 225 degrees C or 450 degrees F.
Wash the veggies with water to remove any dirt, then chop them into small pieces. Add them into a large mixing bowl.
Top the veggies with 1 tbsp fresh herbs, 2 tbsp of olive oil, salt, pepper, and ½ tsp Italian seasoning. Toss the veggies until fully covered. Transfer them into a 9×13-inch casserole dish.
Drizzle olive oil and sprinkle the seasoning over the chicken pieces, then rub each until fully coated.
Put the chicken pieces over the veggies.
Place the baking dish in the preheated oven and roast the chicken for about 12 minutes.
Reduce the heat to about 175 degrees C or 350 degrees F. Cook the chicken for another 1 hour and 20 minutes.
Remove the chicken from the oven and allow them to cool for about 15 minutes at room temperature. Slice them into small cuts.
Serve the chicken with the veggies. Enjoy!
Notes:
For the Chicken Rub:
1 tsp seasoning salt
1 tsp garlic powder
½ tsp rosemary
1 tsp parsley
½ tsp thyme
½ tsp black pepper
Chicken Rub (optional)1 tsp paprika
