In just 30 minutes, this One-Pot Chicken Parmesan Pasta is ready to grace your dining table! Packed with amazing flavors, this recipe is a must-try that you will surely enjoy preparing!
Ingredients:
24-ounce jar of your favorite marinara sauce (I used Newman’s Own)
1 c mozzarella cheese
½ c Parmesan cheese
16 ounces dried short-cut pasta (I used rigatoni)
1 medium yellow onion, minced
1 teaspoon Italian seasoning
water to fill an empty marinara sauce jar
fresh parsley and/or basil, minced for garnish
½ teaspoon garlic powder
3 cloves garlic, minced
additional dried Italian seasoning, optional
2-3 boneless, skinless chicken breasts, diced into bite-sized pieces
salt and pepper, to taste
Directions:
Place a large skillet on the stove and turn the heat to medium-high.
Add a bit of olive oil and allow it to become hot.
Season the chicken with Italian seasoning, garlic powder, salt, and pepper.
Add the chicken into the hot skillet, then cook each side for 5 minutes or until they become golden brown. Transfer the chicken onto a clean plate.
In the same skillet, add garlic and onion. Saute for 3 minutes or until aromatic and translucent.
Add the marinara sauce, then scrape the bottom of the skillet to get the browned bits. Allow the sauce to boil.
Turn the heat down to medium, then add the pasta and chicken.
Cover the skillet, then cook everything for 10 to 15 minutes or until the pasta is al dente.
Add ¼ cup of mozzarella cheese and Parmesan cheese. Stir until well blended.
Sprinkle the rest of the mozzarella cheese over the pasta.
Cook for 3 more minutes or until the cheese has melted completely.
Add more Italian seasoning if you want.
Garnish with freshly chopped basil or parsley.
