Ingredients:
10 empanada dough discs
Salsa or Pico de Gallo for serving
2 c Mexican Street Corn Salad
Directions:
Prepare the air fryer and preheat to 162 degrees C or 325 degrees F.
Place 3 tbsp of the corn salad in the middle of each empanada disc, then fold it in half. Remove any air inside the empanada.
Seal the sides of each empanada by pressing it, then use a fork to crimp the edges.
In a small bowl, crack an egg and beat it until smooth.
Brush the empanadas with the egg wash.
Place them inside the preheated Air Fryer, then cook for about 20 minutes or until they become golden brown.
Remove the empanadas from the Air Fryer and allow them to cool for at least 2 to 3 minutes at room temperature.
Serve warm with Pico de Gallo or salsa. Enjoy!

Feel free to prepare these empanadas ahead of time, then place them inside the freezer.
You can also use the store-bought empanada dough for this recipe.
