This melt-in-your-mouth chicken has been one of my go-to meals. I can prep this in no time and have this ready in a heartbeat. I love serving this melt-in-your-mouth chicken with steamed or roasted veggies or pasta. This simple recipe guarantee tender, juicy, and perfectly baked chicken breasts all the time!
Ingredients
1 c. Parmesan cheese (or sharp Cheddar, or Asiago) divided
4 boneless, skinless chicken breasts, trimmed of excess fat
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon seasoning salt
1 c. mayonnaise (or Greek yogurt for a healthier option)
How to make Melt In Your Mouth Chicken
Step 1: Into three large chunks or strips, slice each chicken breast. In a bowl with milk/buttermilk, place the chicken strips/chunks. Let it sit for at least 20 to 30 minutes up to overnight.
Step 2: Prepare the oven. Preheat it to 375 degrees F.
Step 3: Place the mayonnaise, ½ cup of Parmesan cheese, and seasonings in a small bowl. Mix well until combined.
Step 4: Into a 9 x 13-inch baking dish, place the chicken. On top, evenly spread the mixture, then sprinkle with the rest of the Parmesan.
Step 5: Place in the preheated oven and bake for about 40 to 45 minutes or until the chicken is completely cooked. To get the chicken extra browned, broil for about 1 to 2 minutes.
Step 6: Remove from the oven when done and serve the chicken with veggies such as steamed broccoli. If desired, garnish with some fresh parsley. Enjoy!
