Ingredients:
⅓ c sundried tomatoes, chopped
2 tbsp olive oil
6 tbsp all-purpose flour
2 tbsp butter
¼ tsp oregano
3 large boneless and skinless chicken breasts, sliced into thin cutlets
½ c Parmesan cheese, grated
¼ tsp ground black pepper
1 c chicken stock
1 c heavy cream (double cream in the UK)
3 cloves garlic, minced
½ tsp salt
1 tbsp chili flakes
1 tbsp fresh basil leaves
¼ tsp thyme
Directions:
Sprinkle salt and pepper over the chicken breasts to season.
Add flour into a large bowl, then dredge each chicken breast in it to coat. Remove excess flour.
Place a large skillet on the stove and turn the heat to medium.
Add butter and oil, then allow the butter to melt.
Add the chicken breasts into the hot skillet, then cook each side for about 5 minutes or until they turn golden brown. Transfer them onto a plate.
In the empty skillet, add garlic and sauté for about a minute or until aromatic.
Pour in chicken stock, then scrape the bottom to get the browned bits.
Reduce the heat to medium-low, then add Parmesan cheese and heavy cream. Stir until well blended and simmer for a few minutes.
Add salt, oregano, chili flakes, thyme, and pepper. Stir until well incorporated.
Put the chicken breasts back into the skillet together with the sundried tomatoes, then toss everything until well combined. Simmer for 2 more minutes.
Remove the skillet from the heat. Sprinkle freshly chopped basil over each serving.
Serve right away over rice or pasta. Enjoy!
