Ingredients:
1 medium red bell pepper, halved and sliced
16 oz. can large biscuits
8 oz. cheddar cheese, shredded and divided
2 lbs. ground beef, browned and drained
2 medium tomatoes, sliced
1 medium onion, halved and sliced
½ c sour cream
½ c mayonnaise
1 oz. packet taco seasoning plus water listed on the back of my homemade taco seasoning
4 oz. canned sliced Jalapeno peppers
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray to a 13×9-inch glass baking dish.
Lay the biscuits into a pan in one layer, then press to make them intact. Put the pan onto a baking sheet.
Place the baking sheet in the preheated oven and bake for about 15 to 25 minutes or until done. Remove from the oven.
Place a skillet on the stove and turn the heat to medium-high.
Add the ground beef, a bit of water, and taco seasoning. Stir and cook for a few minutes. Move the beef mixture into a bowl.
In another mixing bowl, add sour cream, ½ of the onions, ½ of the cheddar cheese, and mayonnaise. Stir everything until well blended.
In the pan where you cooked the ground beef, add the onions and bell peppers. Sauté for a few minutes until soft.
Add taco meat over the crust and spread it evenly followed by the tomatoes, sauteed veggies, Jalapeno peppers, sour cream mixture, and shredded cheese.
Place it in the oven and bake for 30 to 40 minutes or until the cheese has completely melted.
Remove the casserole from the oven and allow it to cool for a few minutes at room temperature.
