Ingredients:
For the Meat & Vegetables:
2 medium carrots, finely diced
2 sticks of celery, finely diced
1 lb. ground beef
1 tbsp oil
2 onions, finely chopped
1 clove of garlic, chopped
For the Gravy or to finish filling:
2 tbsp tomato paste
1 tsp finely chopped rosemary
1 c frozen peas
1 tbsp finely chopped parsley
½ tsp salt
ground black pepper to taste
1 c beef broth
¼ tsp ground paprika
2 tbsp white flour
⅓ c red wine OR more broth if avoiding alcohol
½ tsp finely chopped thyme
For the Topping:
½ c shredded cheddar cheese
4 c mashed potatoes (click for my recipe and you’ll have some leftovers to sneak during cooking)
Directions:
Place a large skillet on the stove and turn the heat to medium-high. Add oil and allow it to become hot.
Add the ground beef into the hot skillet, then cook for a few minutes until crumbly and brown.
Add the veggies, then sauté for a few minutes until soft. Add flour, salt, paprika, and pepper. Whisk and cook for about a minute.
Add the tomato paste, then stir and cook for a minute to remove the raw taste.
Add the red wine, then scrape the bottom of the skillet to get the browned bits. Stir until well blended.
Add the peas, herbs, and broth. Stir and simmer for a few minutes.
Transfer the mixture to a 7×11-inch baking dish and let it cool.
Prepare 4 cups of mashed potatoes, then spread them over the filling.
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Place the baking dish in the preheated oven and bake the pie for about 20 minutes or until the top turns golden brown.

Notes:
Place any leftovers in an airtight container, then put them in the fridge. They can last up to 3 days. Reheat for a few minutes before serving again.
