How to make Best Ever Pepper Steak
Step 1: Place the steak on a cutting board and tent it with plastic wrap. Using the flat side of the meat mallet, pound the steak until slightly flattened and soft. Into ⅓-inch thick strips about 2 inches long, cut the steak. Pat dry with paper towels, separating the pieces. Set aside.
Step 2: In a mixing bowl, place the chicken broth, Shaoxing wine, soy sauce, rice vinegar, granulated sugar, black pepper, sesame oil, and cornstarch. Mix well until blended and set aside.
Step 3: On moderately high heat, preheat a non-stick skillet. Once hot, add 2 tsp vegetable oil to the skillet. Add half of the steak, spreading them into a single layer with enough space between each piece. Then, season the steak lightly with salt.
Step 4: Sear the steak on the first side for about 45 to 60 seconds until the bottom is nicely browned. Flip and let the other side cook for another 45 to 60 seconds until brown. To a plate or a sheet of foil, transfer the seared steak.
Step 5: Add another 2 tbsp vegetable oil into the skillet and sear the rest of the steak. Transfer the seared steak to the plate with the rest of the cooked steak.
Step 6: In the now-empty skillet, add the last 2 tsp of oil. Heat on moderately high heat. Then, add the bell peppers and cook for about 3 to 4 minutes, stirring often until a little tender.
Step 7: Then, add the green onions along with the garlic and ginger. Cook for another 1 minute. Pour in the sauce mixture, stir, and continue to cook until the sauce has thickened. Then, toss in the seared steak until coated.
Step 8: Serve the Pepper Steak right away. Enjoy!
