This incredible recipe has always been a part of my family since I was a little kid. My Grandma used to make this for us. Oh, man, I’m telling you, you are so in for a treat! Ingredients:
225g unsalted butter, softened
225g caster sugar
4 Eggs
225g self-rising flour
Zest of 2 lemons
1 teaspoon lemon extract/oil
For the drizzle topping:
Juice of 2 lemons
150g icing sugar
75g caster sugar
Directions:
Step 1: Prepare the oven and preheat to 160 degrees C or 180 degrees F.
Step 2: Apply cooking spray and line with parchment paper a 2-pound loaf tin.
Step 3: In the bowl of a stand mixer, add caster sugar and butter. Beat for 5 minutes or until creamy.
Step 4: Add the eggs gradually and beat every addition.
Step 5: In a small mixing bowl, sift the flour, then add the grated lemon zest and extract. Beat until well mixed. Add 1 tablespoon of milk if the texture becomes too thick.
Step 6: Transfer the mixture into the prepared baking tin and spread it evenly.
Step 7: Place it inside the preheated oven and bake for 30 minutes.
Step 8: Cover it with foil and bake for 30 minutes more or until a toothpick comes out clean after inserting it in the middle.
Step 9: Remove the cake from the oven and allow it to cool at room temperature.
Step 10: In a small mixing bowl, add the icing, caster sugars, and lemon juice. Stir until well mixed.
Step 11: Drizzle the mixture on top of the cooled cake.
Step 12: Serve and enjoy!
