This recipe has always been a part of my life since I was little. This was my favorite food growing up until now! You can say that I’ve perfected this recipe over the years! Now, allow me to share it with you as well! This Crock-Pot Salsa Chicken is best served with your loved ones. Lunch or dinner will be awesome if you only give this one a try! What I love the most about this recipe is that you don’t need to prepare a lot. You just add all the ingredients into the crockpot, seal it, and wait for a couple of hours! Very easy, right? Ingredients:
½ jar salsa
1-ounce taco seasoning
1-14 ounces cans sweet corn (drained & rinsed)
2 boneless chicken breasts
1–14 ounces cans black beans (drained & rinsed)
Optional Garnishes:
Cheese
Avocados
Tortilla chips
Rice
Lettuce
Tomatoes
Limes
Sour Cream
Tortillas
Directions:
In a crockpot, add the chicken breasts and arrange them in a single layer.
Add the salsa, taco seasoning, black beans, and sweet corn over the chicken. Stir everything until well mixed.
Cover and seal the crockpot, then cook everything for about 6 to 7 hours on a low setting or 4 to 6 hours on a high setting.
Transfer the chicken breasts onto a chopping board, then use two forks to shred them into small pieces.
Put the shredded chicken breasts back into the crockpot, then stir everything until well incorporated.
Cover the crockpot and cook the Salsa Chicken for 20 more minutes or until done.
Top each serving with your favorite garnishes.
Serve right away over rice or a wrapped tortilla. Enjoy!
