This Crispy Sweet and Sour Chicken is my new definition of perfection! A must-try recipe that you will surely enjoy preparing. Ready in just half an hour!
Ingredients:
Chicken
1 ½ c flour
1 Egg, beaten
1 tbsp oil, canola oil, or similar
1 tsp salt
vegetable oil, for frying
½ c cornstarch
1 ¼ c of water
1 lb. boneless, skinless chicken thighs, cut into 1-inch pieces, or chicken breasts
Vegetables
1 tbsp oil, canola oil, or similar
1 c pineapple chunks, fresh, or canned/frozen
1 green bell pepper, cut into 1-inch pieces
1 medium yellow onion, cut into 1-inch pieces
1 red bell pepper, cut into 1-inch pieces
Sweet and Sour Sauce
2 tbsp cornstarch, mixed with 2 tbsp water
2 tbsp soy sauce, low sodium recommended
¼ c ketchup
2 tsp garlic, minced, or garlic powder
¼ c rice vinegar, or white vinegar
sesame seeds, optional garnish
½ c sugar
Directions:
1. Add salt, cornstarch, and flour into a large mixing bowl. Whisk until well incorporated.
2. Add water, egg, and 1 tbsp of oil. Whisk until well blended and smooth.
3. Add the chicken pieces, then toss until well coated by the batter. Marinate the chicken for about 10 minutes or 1 hour.
4. Place a saucepan on the stove and turn the heat to medium.
5. Add 1-inch oil and allow it to become hot.
6. Add the chicken in batches into the hot oil, then cook for about 4 minutes or until crispy and golden brown. Transfer them onto a wire rack. Repeat the process with the rest of the chicken.
7. Place a skillet on the stove and turn the heat to medium-high.
8. Add 1 tbsp of oil and allow it to become hot.
9. Add the bell peppers and onion, then sauté for about 2 minutes or until soft and translucent.
10. Add all the ingredients for the sauce (soy sauce, garlic, vinegar, ketchup, and sugar. Add the pineapple as well, then stir until well mixed. Simmer for a few minutes.
11. Add slurry, then stir until well blended. Simmer until the texture of the sauce becomes thick.
12. Put the fried chicken, then toss until well coated with the delicious sauce.
13. Serve and enjoy!
