Ingredients:
½ teaspoon garlic salt
5 tablespoons Vegetable oil
3 chicken breast fillets – chopped into bite-size chunks
2 eggs – lightly beaten
2 teaspoons paprika
½ teaspoon pepper
10 tablespoons plain (all-purpose) flour
½ teaspoon salt
3 tablespoons corn flour (cornstarch)
Sauce:
1 tablespoon Chinese rice vinegar – white wine vinegar will work too
2 tablespoons honey
2 tablespoons sweet chili sauce – use more or less depending on the brand and how spicy you like it
2 tablespoons brown sugar
1 tablespoon sesame oil – optional – you can leave out and just sprinkle with plenty of sesame seeds at the end if you prefer
2 cloves garlic – peeled and minced
3 tablespoons ketchup
4 tablespoons soy sauce
To Serve:
Small bunch of spring onions/scallions – chopped
Boiled rice
2 tablespoons sesame seeds
Directions:
Place a large frying pan on the stove and turn the heat to medium-high. Add oil and allow it to become hot.
Whisk the egg into a mixing bowl. Add corn flour to another bowl. Lastly, add paprika, salt, pepper, flour, and garlic salt into another bowl. Whisk until well incorporated.
Add each chicken into the bowl with the corn flour, beaten egg, and flour mixture. Make sure to coat it well and shake off any excess.
Place the chicken into the hot skillet, then cook all sides for about 6 minutes or until they turn golden brown. Transfer them onto a clean plate lined with paper towels to drain excess oil.
In the same empty skillet, add all the sauce ingredients and stir until well blended. Turn the heat to high and simmer the sauce for a few minutes until it reduces its volume.
Put the chicken back into the skillet, then toss until well coated with the sauce. Simmer for about 2 minutes.
Remove the skillet from the heat, then sprinkle spring onions and sesame seeds on top.
Serve and enjoy!
