Ingredients:
2 ½ tbsp olive oil or canola oil
8 cloves garlic (minced)
½ tsp freshly ground black pepper
2 tbsp fresh chopped parsley
1 tsp sea salt
2 ½ lbs. russet potatoes (cut into 1-inch cubes)
2 tbsp grated Parmesan cheese (optional)
1 tsp smoked paprika
¼ tsp dried parsley
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Apply cooking spray onto a baking tray.
Peel the potatoes and slice them into small cuts.
Put the potato slices into a mixing bowl, then cover them with cold water for about an hour.
Drain the water, then add another cup of cold water into the bowl and allow the potatoes to rest for one more hour.
Remove the potatoes from the water, then use paper towels to pat them dry.
Put the prepared potatoes into a large mixing bowl together with garlic, smoked paprika, olive oil, salt, pepper, and dried parsley. Toss everything until the potatoes are well coated with the seasonings.
Place the potatoes onto the prepared baking tray and arrange them in a single layer. Leave a small space between each potato.
Place the baking tray in the preheated oven and roast the potatoes for about 45 minutes to 1 hour until they turn golden brown.
Remove from the oven, then sprinkle more salt and pepper on top.
Top with Parmesan cheese and freshly chopped parsley to garnish.
