You are so in for a treat! This Creamy Chicken Stew will be the best thing you will ever eat today! The great combination of all the flavors made this dish insanely delicious! A must-try indeed!
Ingredients:
2 large red potatoes, sliced
1 c sour cream, at room temp
10.5 ounces cream of chicken soup
2 boneless chicken breasts, cut into bite-sized pieces
1 small onion, diced
½ c celery, diced
2.5 tsp Italian seasoning
¾ c green beans, fresh or frozen
1 c whole milk, don’t substitute low-fat
1-ounce dry ranch dressing mix
1 tbsp butter
1 c baby carrots
1 tbsp olive oil
Salt/Pepper
Directions:
Stove Method:
Place a soup pot on the stove and turn the heat to medium. Add butter and allow it to melt.
Add the chicken cubes into the pot, then cook for a few minutes until they turn brown. Season with salt, pepper, and Italian seasoning to taste. Transfer the chicken onto a clean plate.
In the empty pot, add vegetable oil and allow it to become hot.
Add the veggies, then sauté for a few minutes until soft.
Put the chicken cubes back into the pot, then toss until well combined with the veggies.
In a mixing bowl, add milk, sour cream, cream of chicken soup, and ranch seasoning. Stir until well incorporated.
Pour the mixture into the pot and stir until well blended. Simmer for about 45 minutes.
Serve with biscuits. Enjoy!
Crock-Pot Method:
Sprinkle Italian seasoning, salt, and pepper over the chicken. Toss until well coated.
Add the butter and olive oil into the crockpot and allow it to melt.
Add the veggies and chicken. Stir until well combined.
Add the ranch seasoning, soup, milk, and sour cream. Stir until well blended.
Cover the crockpot, then cook for about 6 to 8 hours on a low setting.
Serve and enjoy!
Instant Pot:
Press the “Sauté” button on the Instant Pot.
Add butter, olive oil, and veggies. Sauté for a few minutes until soft.
Sprinkle Italian seasoning, salt, chicken, chicken broth, and pepper over the chicken. Toss until well combined.
Cover and press the “Pressure Cook” button. Cook for about 8 minutes.
Add ½ milk, ranch seasoning, ½ sour cream, and cream of chicken soup. Stir and simmer for 5 more minutes.
