These are the best cream cheese chicken tacos! I’ve made this dish again yesterday and as expected my family devoured it! I serve these tacos with beans and rice for a filling meal that my family absolutely enjoys!
Ingredients
2 cups of deli rotisserie chicken or leftover roast/baked chicken shredded
1 (8 ounces) pkg. cream cheese
2 clove garlic, minced
1 c. shredded cheddar cheese
10 medium corn tortillas
1 bunch of green onion, thinly sliced
canola oil for frying
½ teaspoon salt
¼ teaspoon pepper
HOW TO MAKE CREAM CHEESE CHICKEN TACOS
Step 1: Prepare the oven. Preheat it to 425 degrees.
Step 2: Heat 1 tbsp olive oil in a skillet. Once hot, add the tortillas one at a time and fry until slightly browned. As needed, add a little oil to the pan. Transfer the tortillas to a paper towel when done.
Step 3: Warm the cream cheese in a small saucepan over low heat, stirring constantly until completely melted. Next, add the garlic along with the chicken, green onion, and cheese. Stir well until blended. Once done, take the pan off the heat.
Step 4: Onto a baking dish, place the tortillas. In between the shells, place the chicken.
Step 5: Place in the preheated oven and bake for about 10 minutes or until the shells begin to turn deep brown.
Tips:
Corn tortillas are the best tortillas to use for this recipe. You can swap it with flour tortillas, but note to adjust the cooking time as needed.
These cream cheese chicken tacos are awesome to pair with rice and beans. You are welcome to add your favorite toppings, such as lettuce, tomatoes, and avocado. You can even add salsa for some kick.
Frying the chicken is not required for this recipe. But If you want to get a deeper color, you can fry the chicken. Note not to deep fry the chicken. Just let it sit until light brown.
