Ingredients:
8 ounces fettuccine pasta (for a gluten-free version, use gluten-free brown rice fettuccine)
2 c broccoli florets, blanched
7 strips bacon
⅔ c heavy cream
3 cloves garlic, minced
⅔ c milk
1 tbsp olive oil
1 c Parmesan cheese, shredded
1 pound chicken breast, boneless and skinless
¼ tsp salt
¼ tsp pepper
Directions:
Place a large skillet on the stove and turn the heat to medium-high.
Add olive oil and allow it to become hot.
Sprinkle salt and pepper over the chicken breast, then toss until well coated.
Place the chicken into the hot skillet, then cook for about 4 minutes per side or until golden brown. Transfer the chicken onto a clean plate. Slice it into small pieces.
In the same skillet, add the minced garlic and sauté for a minute or until aromatic.
Pour in the milk and heavy cream, then stir until well blended. Make sure to scrape the bottom of the skillet to get the browned bits.
Turn the heat down to low and simmer for a few minutes.
Add the cheese and stir until melted completely.
Refer to the directions provided on the package of pasta on how to cook it. Drain.
Transfer the drained pasta into the skillet with the sauce together with the cooked broccoli and cooked bacon, then toss everything until well combined. Sprinkle salt and pepper to season.
Add the chicken slices on top of the pasta dish and garnish with your preferred greens.
