Ingredients:
1 tbsp vegetable oil, Canola, or Olive Oil
1 tbsp Italian Seasoning
6 slices of bacon, uncooked and thawed
3 russet potatoes, Scrubbed clean
Salt/Pepper, to taste
2.5 c cheddar cheese, shredded
2 green onions, diced
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Leave the bacon at room temperature for about 5 minutes.
Slice the potatoes into 12-inch pieces.
Brush all sides of the potatoes with olive oil.
Sprinkle salt and pepper over the potatoes, then toss them until well coated.
Place the potatoes onto a baking sheet and arrange them in a single layer.
Put the baking sheet inside the preheated oven and bake the potatoes for about 25 minutes or until fork-tender.
Place a pan on the stove and turn the heat to low.
Add the bacon into the pan, then cook for a few minutes until crispy. Transfer the crispy bacon onto a clean plate and leave the bacon grease in the pan. Crumble the crispy bacon.
Remove the baking sheet from the oven, then brush each potato with the bacon grease.
Put them back in the oven and bake for 10 more minutes or until done.
Reduce the heat of the oven to about 350 degrees F.
Remove the potatoes from the oven, then scatter the crumbled bacon and grated cheese on top.
Bake for 5 more minutes or until the cheese turns golden brown.
Sprinkle green onions and Italian seasoning on top to garnish.
Serve with sour cream. Enjoy!
Notes:
Exchange Italian seasoning with Ranch seasoning if you want to.
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 3 to 4 days. Reheat in the oven.
You can use Monterey Jack cheese for this recipe if you prefer.
