Ingredients:
1 package pork tenderloins, trimmed (comes with 2 pieces, 2 – 2 ½ lbs. total)
¼ c kosher salt
4 c warm water
2 tbsp apple cider vinegar
2 tbsp brown sugar
1 c ice cubes
2 tbsp lemon juice
3 tbsp butter sliced into 6 pads
Spice Mix:
1 tablespoon EACH chilli powder, garlic powder
1 teaspoon EACH salt, onion powder
½ tsp smoked paprika
¼ teaspoon pepper
Garnish:
½ teaspoon EACH dried parsley, dried basil, dried oregano, dried thyme
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Line a baking sheet with two pieces of aluminium foil.
Step 3: Mix warm water and sat in a large-size freezer bag.
Step 4: Add in the brown sugar, ice, apple cider vinegar, and pork meat. Let the pork sit in the bag to brine for at least 20 minutes.
Step 5: Remove the pork meat from the bag, rinse, and pat them dry with paper towels.
Step 6: In a small mixing bowl, add all the ingredients for the Spice Mix. Whisk until well mixed.
Step 7: Run the Spice Mix all over the brined pork.
Step 8: Place a large skillet on the stove and turn the heat to medium-high.
Step 9: Add 2 tablespoons of vegetable oil and allow it to become hot.
Step 10: Add the pork and cook each side until golden brown. Make sure to cook them in batches.
Step 11: Place the seared meat into the foil.
Step 12: Generously sprinkle basil, parsley, thyme, and oregano on top. Rub the pork to make sure they are perfectly coated.
Step 13: Drizzle lemon juice on top of each pork meat.
Step 14: Place 3 pads of butter on top, then close the foil to seal the meat.
Step 15: Place them inside the preheated oven and bake for 15 to 25 minutes or until done.
Step 16: Remove from the oven and allow the meat to rest for 5 to 10 minutes.
Step 17: Slice and sprinkle more salt and pepper if needed.
Step 18: Serve and enjoy!
