I love this Asian salmon and noodles! This dish has been my favorite since my husband first made it. Pan-seared salmon slightly coated with honey and soy sauce, then broiled. Serve this flaky, flavorful salmon over Asian-style noodles with veggies for an impressive yet easy weeknight dinner.
Ingredients
Asian noodles:
5 green onions, chopped
1 tbsp olive oil
10 button mushrooms, sliced, or 1 Portobello mushroom, sliced
¼ c. soy sauce
2 tbsp sesame oil
¼ c. honey
¼ c. chicken stock
1 tbsp sesame seeds
½ pound pasta, preferably Fettuccine (half a pound)
2 c. snow peas end trimmed (about 60 snow peas)
1 tsp Sriracha sauce (or use other hot sauce if you don’t have Sriracha)
Asian salmon:
1 lb salmon
1 tbsp honey
2 tbsp cooking oil
1 tbsp soy sauce
salt & pepper
How to make Asian salmon and noodles
Asian Noodles:
Step 1: In a large frying pan, heat the cooking oil over medium heat. Once hot, add the chopped green onions along with the sesame seeds. Saute for about 2 to 3 minutes before adding the sliced mushrooms. Continue to cook for 2 minutes more. Then, take the pan off the heat. Stir in the soy sauce, honey, chicken stock, sesame oil, and Sriracha.
Step 2: Boil snow peas in another pan for about 3 to 5 minutes until tender but still crunchy. Drain when done.
Step 3: Following the package directions, cook the pasta in a large pan with boiling water until al dente. Drain when done.
Step 4: Into the vegetables and sauce in the large frying pan, add the drained snow peas along with the pasta. Toss well and cook further over medium-low heat.
Asian salmon:
Step 5: Ready and preheat the broiler.
Step 6: On high heat, heat a large skillet. In the meantime, generously season the non-skin side of the salmon with salt and pepper. Drizzle oil into the hot skillet, then add the salmon, skin side-up. Sear the salmon for about 4 minutes, moving the salmon around the skillet.
Step 7: Flip the salon after 4 minutes and sear the other side for additional 3 minutes over high heat. If desired, you can remove the skin of the dish and discard it.
Step 8: Combine the honey and soy sauce. You can slightly heat it on the stove or microwave to soften the honey. Then, brush the top of the salmon with this honey-soy sauce. Under the broiler, place the salmon for about 3 minutes. Midway through broiling, brush the salmon again with the sauce. Continue broiling for a total of 3 minutes until the top of the fish is slightly charred.
Step 9: Serve the salmon right away. Or tent until ready to serve. You can keep the salmon covered to cook it further if the salmon is still slightly undercooked in the middle.
