Ingredients:
Batter
⅓ c corn starch
1 12 ounces beer
2 c flour
1 tsp paprika
1 tbsp baking powder
2 tsp salt
Remaining Ingredients
corn oil (for frying)
1 -2 lbs. fish fillets
Directions:
In a mixing bowl, add all the dry ingredients. Whisk until well combined.
Pour in beer and stir until well blended and smooth.
Place a non-stick pan on the stove and turn the heat to medium.
Add 2-inches of oil and allow it to become hot.
Use paper towels to pat dry the fish.
Coat each fish with the beer batter. Shake off any excess.
Add the fish and cook each side for about 3 minutes or until they turn golden brown. Make sure to cook them in batches to prevent overcrowding.
Remove the fish from the pan onto a clean plate lined with paper towels to drain any excess oil. Repeat the process with the rest of the fish.
Serve hot and enjoy!
Notes:
Add more beef if the texture of the batter is too thick.
Add more flour if the texture is too dry.
