Ingredients:
Beef Wellington Turnovers
2 tablespoons Olive Oil, divided
1 large egg
12 ounces Sirloin, thinly sliced and chopped fine (can substitute with ground beef)
17.3 ounces package Pepperidge Farm Puff Pastry, use both sheets
1 ¾ c Chopped Mushrooms
2 tablespoons Dijon Mustard
½ c Chopped Yellow Onion
½ teaspoon Thyme
4 ounces Prosciutto, 8 thin slices
1 tablespoon Water
Salt & Black Pepper, to taste
Sweet Chili Wine Sauce
¼ c Rice Vinegar
1 tablespoon Sherry Wine
½ c Water
½ tablespoon Soy Sauce
1 tablespoon Minced Garlic
2 tablespoons Cold Water
1 tablespoon Corn Starch
¾ c White Granulated Sugar
1 teaspoon Red Pepper Flakes
Directions:
Add the onions and mushroom slices into a food processor, then pulse until finely chopped.
Place a large pan on the stove and turn the heat to medium-high.
Add 1 tbsp of olive oil and allow it to become hot.
Add the sirloin, onions, thyme, and mushrooms. Stir and cook for about 4 minutes or until brown. Sprinkle salt and pepper to season. Discard any excess grease.
Add the Dijon mustard and stir until well blended. Remove from the heat.
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Line with parchment paper a baking sheet.
Add the puff pastry onto a flat surface, then roll and divide into two.
Add a slice of prosciutto over each square, then top it with a spoon of the beef mixture.
Close and press the opposite sides.
Arrange them onto the prepared baking sheet.
Brush the top of each turnover with the egg wash.
Place them inside the preheated oven and bake for about 20 minutes or until they turn golden brown.
Prepare the sauce over medium heat. Allow it to simmer for 8 minutes.
Add the slurry and stir until well blended. Simmer for a few more minutes until the texture becomes thick.
