Ingredients:
3 pound chuck roast or your favourite stew meat cut into bite-size pieces (about 1 to 2”)
3 tablespoons flour
½ teaspoon salt
½ teaspoon pepper
½ teaspoon paprika
3 tablespoons butter
3 tablespoons olive oil
1 tablespoon garlic minced
1 onion chopped (one small onion or half of a large onion)
3 carrots peeled and cut into bite-size pieces (1”)
2 celery stalks cut into bite-size pieces
1 pound potatoes peeled and cut into bite-size pieces
3 c beef broth
¼ c tomato paste
1 tablespoon Worcestershire sauce
½ teaspoon rosemary
1 bay leaf
1 c peas
2 tablespoons cornstarch
2 tablespoons water
Directions:
Step 1: In a shallow dish, add in the flour, paprika, salt, and pepper. Whisk until well combined.
Step 2: Add the meat into the flour mixture and toss until everything is well coated with the mixture.
Step 3: Place a large stockpot on the stove and turn the heat to medium-high.
Step 4: Add in the butter and allow it to melt.
Step 5: Add in the coated meat pieces and cook until brown. Make sure to cook them in batches and add more butter or oil if needed.
Step 6: Remove the meat pieces from the pot and place them on a clean plate.
Step 7: In the same pot, add in the onion, garlic, celery, and carrots, and then cook for a few minutes or until translucent and caramelized.
Step 8: Add in the tomato paste, beef broth, Worcestershire sauce, bay leaf, potatoes, and rosemary.
Step 9: Put the meat back into the pot and stir until well mixed.
Step 10: Turn the heat up to medium-high and allow the stew to boil.
Step 11: Cover the pot and turn the heat down to low, and then cook for about 60 to 90 minutes or until the meat is fork-tender.
Step 12: In a small cup, add in water and cornstarch. Stir until well dissolved, then pour in over the beef mixture.
Step 13: Cook for another 10 to 15 minutes while stirring from time to time until the sauce becomes thick.
Step 14: Discard the bay leaf and add the peas into the stew.
Step 15: Cook for another 5 to 10 minutes or until done.
Step 16: Ladle the stew into serving bowls.
Step 17: Serve hot and enjoy!
